- You need 400 gm of small kathal, chopped.
- You need 1/3 cup of chana dal (Bengal Gram lentil), soaked overnight.
- It's 2 tbsp. of oil.
- Prepare 2 of bay leaves.
- You need 2 of dry red chilies.
- You need 1 of : cinnamon stick.
- It's 2 of green cardamoms.
- You need 4 of cloves.
- You need 1/2 of mace.
- Prepare 1/2 tsp. of peppercorns.
- It's to taste of salt.
- Prepare 1/2 tsp. of turmeric powder.
- You need 1 of " ginger, chopped.
- Prepare 3-4 of garlic cloves, chopped.
- Prepare 1 of onion, chopped.
- It's 2-3 of green chilies, chopped.
- It's 2-3 tbsp. of coriander leaves, chopped.
- You need 2-3 tbsp. of roasted gram flour.
- It's 2 tsp. of cashews, coarsely crushed.
- Prepare of oil to shallow fry.

- Heat oil in a pan & temper with bay leaves, red chilies, cinnamon, cardamoms, cloves, peppercorns and mace. Saute for a few seconds..
- Add the raw jackfruit, chana dal, ginger, garlic, salt and turmeric powder..
- Saute for 2 minutes..
- Add 1/2 cup water..
- Pressure cook for one whistle. The water needs to be absorbed. If not simmer till dry. Allow it to cool down. Then grind into a coarse paste..
- To it add the onions, coriander leaves, green chillies, roasted gram flour.
- And cashewnut powder..
- Combine everything well and then form into round shaped kebabs. Refrigerate it till frying time..
- Heat 1-2 tbsp. oil and shallow fry the shami kebabs in batches till golden on both sides. Drain on a kitchen towel..
